These are the most buttery, crunchy, warm and decadent treats anyone can make.
Aaaand...
The're gluten, dairy and nut free
Pretty cool right?

A cookie can be capable of so many things, from making you feel better as a child to remind you of fond memories when times are rough.
A cookie can be a very sincere gesture of love.
That being said, is there a better way to say "I love you" than baking cookies for our loved ones?
(I don't know and nor will I change my mind)
Here's the recipe :
Ingredients:
200g gluten free flour ( I used an all purospuse from freee)
50g butter ( make it vegan if you're lactose intolerant)
100g granulated sugar
50g brown sugar
1 tsp ground cinnamon
1tsp vanilla
1 egg
100g dark chocolate ( use baking chocolate, thank me later)
Instructions:
Weigh and measure all your ingredients and test the appliances you will need before you start
Cream the butter with sugars, egg, vanilla and cinnamon. Once it's all well mixed, add 1/3 of the flour (eyeball it), incorporate with a spatula until homogenous and repeat 2 more times.
Chop the chocolate and gently fold it into your dough.
Place the dough in the fridge overnight or (if your are very desperate) freeze the dough for 40min.
Preheat your oven at 180 °C/ 375 °F
Scoop the cookie dough ( you can use an ice cream scooper or a measuring tbsp to make them all the same size) on a baking sheet lined with parchment paper or greased and floured ( anything but foil, because your cookies will likely stick and burn)
Place your baking sheet in the middle rack and bake for 15-20min or until golden brown.
Let them cool for a bit before taking them out of the Baking sheet and place them on a nice platter or dunk them in milk right away ( dairy free, of course)

Pro tips:
- Store them in an air tight container once (and only once) they have completely cooled down.
- Don't skip the fridge step (it seems unnecessary, but actually makes a big difference)
