Halloween special - - Carrot cake

Celebrate this Halloween ( at home) with a delicious and super easy carrot cake.




Recipe:


Ingredients :

-- for the cake  - -


- 300g shredded carrots

- 100g raisins / dry fruit mix

- 200g finely chopped walnuts

-  300g all purpose gluten free flour

- 4 eggs

- 100 ml/g  milk ( I used almond milk )

- 20g brown sugar

- 1 tbsp/ 15g  olive oil

- 5g/ the juice of half a lemon

- 3g  Baking  powder ( make sure it's gluten free)

- 1/2 tbsp ground cinnamon

- 1 tsp ground ginger

- 1 tsp vanilla extract

- 1/2 tsp cardamom


-- for the glaze--

- 100g cream cheese  ( use vegan cream cheese if you like)

- 100g butter  ( vegan butter works as well )

- 150g powdered sugar

- vanilla extract

-  black food coloring

- instant coffee / chocolate chips  / edible eyes


Step 1) Combine carrots, raisins, nuts, lemon juice, sugar and spices. Set aside for 15 minutes.





Step 2) Separate whites from yolks and whipp the egg whites until you get firm peaks.



Step  3) Add yolks, oil and milk to the carrot mixture and start sifting the flour and baking powder on top alternating with the egg whites. ( sift 1/3 of the flour, mix, add 1/3 of the egg whites, mix and continue until everything is mixed in).


Step  4) Pour the mixture into a cake pan lined with parchment or one that was previously buttered and floured. Bake at 170 °C for 30-45 minutes or until the top is golden brown and if you insert a cake tester or, let's be real, a wooden stick, it comes out clean.







Step 5) Let it cool completely  ( this can take anywhere from 1 hour to 3 hours)




Step 6) Make the glaze by combining cream cheese, butter, vanilla extract, and whip until everything is mixed in. Add 1/5  of the sugar, beat on low and repeat until you use all of it. Set aside 1/4 of the glaze and dye the rest black by adding food coloring and beating once more.



Step 7) Decorate. Pour the black glaze on top of the now cooled cake and chill in the fridge for about 10 minutes. Take a tsp and gently spoon the white glaze onto the black glaze, and then turn it a little to create a "tail". Rinse and repeat until you run out of glaze or space to decorate. Take two instant coffee granules/ chocolate chips / edible eyes  and place them onto the white dots to complete your ghosts 




You have finished your tassssdsk (serpently speaking...) 🐍



This cake will last 4 days covered, in the fridge, but making it the day before lets the spices get to know each other.
